The Multistage Blancher is suitable to blanch the vegetables in order to facilitate their long-life by restricting their enzyme activity.
During its operating cycle, the machine is filled with high temperature water by means of steam injection. The product is usually loaded onto the motorized conveyor either through a vibrator or hydraulically; here it firstly enters the machine and reaches the pre-blanching zone where, by means of nozzles, it is sprinkled with lukewarm water, passes through the blanching zone and eventually reaches the pre-cooling zone. The configuration of the water temperature, the treatment time, the alarms and the data registration are all controlled automatically. Once the product is treated, it can either proceed to the filling phase or face a cooling process depending on whether it needs to be packaged or frozen.
